The resting time of grapes before the crushing, the fermentation time, influenced by the cold winter temperatures, and the fining time in the cellar. Without good timing, there cannot be a great Amarone. The Corvina, Corvinone, Rondinella, and Molinara grapes during the drying go through deep changes that come out later through a very broad range of flavors: blackberry, cherry, sour cherry, and plum, as well as tobacco, cocoa, pepper, and cinnamon. The taste can immediately sense this wine's richness, generosity, and depth.
